I fix this often which means, for me, it has to be easy. I used to add way too many items and it would take too long to make. Then by adding so many different ingredients the salad would grow to more than I could eat. Leftover salad usually gets thrown out around here because after it sits in the fridg it gets all mucky looking in no time.
But, No More!.
Here is what I do:
Start with one romaine lettuce heart. I like these they come 3 or 4 in a bag and stay fresh for a good week. Or a mix bag of baby greens, whichever strikes you as tasty.
Grab another one or two items, the ones that look good to you that day, or what you may have.
I like to make a good size bowl and I find it is important to add something solid to make it feel like a real meal. Most often lately I use chopped walnuts and dried berries. Raisins do very well also. Sometimes I will add cheese or meat.
For dressing I just love trader joe’s peanut vinaigrette. It seems a good tasting dressing keeps me encouraged to break out a salad instead of one of the many more fattening foods I like too much.
