It’s that darn Pasta! All those carbs. So dump the pasta. Replace all the pasta with cauliflower. The taste levels are very similar. What flavor does pasta have, after the sauce? Almost none. Cauliflower is very similar in that regard.
Make the sauce, lots of tomatos, tomato paste, garlic, onions, mushrooms, some oregano, or if you are lazy like me, just sprinkle in italian seasoning from the little jar. Add some fresh basil. Now you’re talking.
Some lean meat, whatever you like and a bunch of chopped up cauliflower. So much more healthy and so many fewer calories and almost no carbs.
Try it I dare you.

What a great idea. Does this really work? I agree the best part of eating pasta is usually the sauce!

Sounds interesting-I really dislike Cauliflower, maybe the sauces would disguise it!

What a cool idea. I’ll have to try this one. I’ve been using whole wheat pasta, which seems to be lower in carbs than the stuff made from white flour. But I would have never thought of this idea!

What a great idea! I love cauliflower but how do you keep it from overcooking and turning to mush when you keep it warm with the sauce? Al Dente?

I have tried this several times, with marinara and alfredo style sauces, a variety of different fish and with chicken.
Have to watch the alfredo for calories though. I just use less sauce. I make maraina from scratch, fresh tomatos, tomato paste, garlic, muchrooms. Then add whatever seems good.
